Elizabeth’s Dampa

For 2 or 3 people you need:

1/2 cup self raising flour

or Alison Holst’s Baking Mix

1/4 cup of water

extra flour or mix

jam

First cut a long stick for each person from a growing tree. Each stick should be as thick as a

pencil.Mix the flour or baking mix with the water in a large bowl, using a knife.

Add about a tablespoon of extra flour to coat the dough and cut it into six or eight pieces in the bowl.

Roll each piece into a long pencil shape, using just enough flour to stop it sticking.

Wind a strip round the end of your stick so it looks like a snake coiled round the end.

You should not be able to see the stick between the coils.

Hold the dampa near the hot coals of a barbecue or bonfire until it is brown and crisp.

Pull out the stick carefully.

Drop a little jam into the hole where the stick was. Eat while warm.
